Indian Style Chicken

A friend on Feeling Scrappy requested this recipe so I thought I would share it here. It is very yummy and was given to me by Don's great aunt Clair. She was a wonderful cook and I am happy to serve her recipe in my own home. Hope you enjoy it as much as we do!

Ingredients:

3 whole boneless skinless chicken breasts - cut into bite sized pieces
2 T. oil
1 cup chopped onion
3 cloves garlic minced
1 T. fresh grated ginger
1 tsp ground cumin
3/4 tsp turmeric
1 tsp ground coriander
1/2 tsp red pepper flakes (more if you like it hot)
1 bay leaf
1 1/2 cups chopped tomatoes (I use diced in the can)
1 cup chicken broth
1/2 cup yogurt
1/4 cup sour cream

Instructions:
Heat oil in skillet. Brown chicken then add onion and garlic and saute 3 or so minutes. Add all spices, tomatoes and chicken broth and let simmer until done. Remove bay leaf then stir in yogurt and sour cream. Serve over rice (we like jasmine)

As with any recipe adjust the spices to your families tastes. Enjoy!!

Pool Party

Sam had a sleep over this weekend with three of his friends. Add my three to the mix and it made for some craziness! The kids all had a great time playing together in the pool then later for movies and games. We are all dragging today from the late night but it was worth it! :)

Happy Birthday Sam!

My son, Sam, turned 10 this past weekend. He said it was his best birthday ever! My parents came into town to help us celebrate and we really did have a great time. We went to Dave and Busters (an arcade/bar) for lunch and games. Then we headed home to open some presents (he loved his new gameboy DS!) and relax then off to our favorite restaurant - The Melting Pot! It was a special day for all of us!
